Recipes: Crispy Fish and Peppers

Crispy Fish & Peppers
Makes 4 servings, 20 mins start to finish

Ingredients
1lb Fresh/Frozen(thawed) small Fish Fillets
3/4 cup Buttermilk
1 Egg
1 teaspoon Cajun Seasoning
1 cup All-Purpose Flour
3-4 tablespoons Vegetable Oil
1 cup Sliced/Chopped Miniature Sweet Peppers
1 Lemon Sliced

Directions
Rinse fish and pat dry with paper towel. In a shallow dish, whisk together buttermilk, egg, and Cajun seasoning. Place flour in another shallow dish. Dip fish into your buttermilk mix and flour dishes; repeat to coat fish twice.

Heat 3 tablespoons of the oil in a large heavy skillet over medium-high heat. Carefully add fish to hot oil, working in batches. Cook for 3-5 mins on each side/until golden. Add more oil if needed.

Drain oil from skillet, wipe clean with paper towel. Add peppers to skillet an cook for 2 mins/crisp and tender.

Serve fish with lemons and peppers.
